Years ago George, me & my friends threw a tamalada, back in Texas (when I first opened my restaurant) also known as a tamale-making party, for you gringos. Tamaladas are a deeply-rooted Mexican tradition, typically held around Christmastime, when it is customary for families to gather and assemble, cook and feast on tamales. For generations, tamaladas have served as a social celebration, bringing together loved ones for good food and great company. And while our tamalada was a little late in the season, because we were busy running Our restarting it was exactly that. Friends, Family, love, laughter, memories, an experience with tantalizing dishes of tamales and New Mexico Style Chile’s. 🌶
When I was young our New Mexican tradition was all my Aunts and Uncles, and My Mom gathering with all my cousins running everywhere prepping for this day! (My Puerto Rican side did the same only they were not as GRAND because they didn’t have such a large family as my Moms side, plus my Daddy passed away when I was 9, so it wasn’t as often)
Everyone from youngens to the elders would have a job because it’s such a long time consuming task.... some would be responsible for deseeding the chile pods, washing every single pod, then blending of the Chile's some would be responsible to go outside and wash leaf by leaf making sure all the debris were gone and that the corn husks were soft and pliable... some would be responsible for cutting Garlic, onions and any other seasonings used... then cutting of the Meats, then mixing of the masas from scratch, all by hand (just like I do it today) then they put table after table together in this long form, line it with newspapers (because it can get messy) and start the assembly process.
In between the tamale making were great nostalgic stories from when they were younger, games we kids played like Rummy card games and dominos, loud mariachi music playing, dancing in the kitchen, shots of Tequila and beers for all the grown ups (needless to say many health issues later in life and early deaths connected to the carefree lifestyle) going around while all of us kids were laughing, playing and smelling the wonderful aromas of the tamales steaming! There was no such thing as bedtime that night, not if you wanted any tamales that’s for sure! Usually a big pot of fresh menudo was simmering, yummy! Windows all fogged up I can’t tell you how much love was in those rooms when we did this!!!❤️❤️❤️
It was a true testament to our Catholic heritage, family tradition and love! Always New Mexico Style and 3-4 Generations of Love that I could recall! And after all that work we were LUCKY if we all took home a dozen! Waking up to a fresh tamale was HEAVEN! I’d do it ALL again in a heart beat... those were the days of family, first love, Rancheras, great values and traditions... amazing tamales and mostly a time I had my Momma💜 with me... I love you Mom!
